Lemon Tart

A unique modern restructured tart with the highest harvested grade of bali lemon and basil.

Ingredients

This Recipe Serves 4

200 gr Lemon curd  

200 gr Chantilly cream   

200 gr Sable crust  

8 pcs Fry basil  

5 gr Icing sugar

 

FOR LEMON CURD:

1 pc Lemon zest

100 gr Lemon juice  

90 gr Sugar  

2 pcs Egg whole  

1 pc Egg yolk  

110 gr Butter

 

FOR CHANTILLY CREAM:

200 ml Whipping cream

40 gr Icing sugar

1/2 pcs Vanilla beans

 

FOR SABLE CRUST:

7 pcs Egg yolk

250 gr White sugar

216 gr Soft butter

300 gr Plain flour

16 gr Baking powder

2 gr Salt

 

INGREDIENTS FOR FRIED BASIL:

8 leafs Basil leaves

8 spray Oil spray bottle 

1 Clean wrap 

Ceramic plate  

Microwave

 

*if u don’t have it, you may use a pot and oil same result just the basil will be curly and a bit dangerous for the splash of the hot oil

Direction

FOR LEMON CURD:

  • Scale all the ingredient into a bowl except the butter, cut it into small cubes and leave in the fridge (you will it need later to finish the curd), in the mean time, place a pot with water and warm it up to a max of 75 degrees Celsius.
  • Place the metallic bowl on the top of the pot.
  • Steer frequently so it doesn’t become scramble eggs. Once that is starting to firm up, it will be time to start to place the cold butter.

    FOR CHANTILLY CREAM:

  • Place a metal bowl in the freezer for at least 30 min.
  • Scale the ingredient above; pour it inside of the cold bowl. 
  • Wick until is fluffy and creamy place it into piping bags.
  •  

    DIRECTIONS FOR FOR SABLE CRUST:

  • Scale the ingredient into separate bowls.
  • In a kitchen aid (mixer), place the flour, sugar, baking powder, salt and mix at low speed. Once all the dry ingredient area amalgamate well, start to pour the egg. Make sure that the eggs are spread properly before adding the butter.
  • Remove from the bowl and roll it to make a sheet 2 cm thick
  • Place it into the freezer to rest ,the next day it will be ready to use
  • Bake at 180 degrees for 10 minutes..

    DIRECTIONS FOR FRIED BASIL:

  • Take the biggest plate in your kitchen and wrap it with a clean wrap before spraying the top with oil.
  • Spray the basil leafs with oil and place it on the top of the plate. 
  • Pass true another layer of clean wrap. 
  • Make a whole.
  • Place in the microwave 300 Watts for 5 minutes
  • Take out from the microwave and let it rest for a minute.
  • Place it onto a plate with tissues to take out the excess of the oil.

    Serves

  • Gather the entire ingredient.
  • Cut the sable in a rectangle shape -pipe the lemon curd and the chantilly cream on the sable make 2 layers.
  • Place the basil on the top and dust with some icing sugar.
