Mana Kitchen is a farm-to-table restaurant where Indonesian tradition meets the ancient knowledge of Japanese superfood. They try our best to offer food the way the earth blessed them with because food is meant to sustain lives but so much of the food today does otherwise! Their nourish dishes are carefully prepared with the following elements: organic, heirloom, probiotic and eco-conscious – they are not vegan but don’t serve red meat especially beef since beef requires 20 times more land and emits 20 times more GHG emissions than plants. This one-of-a-kind restaurant is run by an award-winning NGO, Earth Company. We serve our probiotic rice after fermenting it for 3-5 days. It is the most efficient way to appreciate the nutrients of the natural rice. We cook our probiotic rice in a particular way with red beans and a bit of salt. After 10 days of fermentation, the enzyme content increases by 100 times!
