Nasi Uduk Jakarta

Nasi uduk is one of numerous Indonesian rice-based dishes. The rice in nasi uduk is cooked in coconut milk together with lemongrass, cloves, pandan leaves, and sometimes cinnamon. It is a dish rarely eaten on its own, but rather served with a variety of side dishes and condiments, such as meat, rice noodles, eggs, tempeh or tofu.

Ingredients

This Recipe Serves 1

FOR RICE:

450 gr Rice

450 ml Water

1 pc Smashed lemon grass

4 cm Smashed ginger

4 cm Smashed galangal

2 pcs Bay leaf

1 pc Pandan leave

3 pcs Torned lime leaves

65 ml Coconut milk

10 gr Salt

 

FOR CHICKEN:

1 kg Chicken (4 parts)

  • clean and marinate with lime & salt, leave it for 15 minutes
  •  

    Seasonings 1: 

    4 cm Tumeric

    4 cm Ginger

    4 cm Galangal 

    5 pcs Onions 

    5 pcs Garlic 

    3 pcs Candle nut 

    1 tsp Pepper 

    1 tsp Coriander 

     

  • All above ingredients blend and mashed finely.
  •  

    1 pc Smashed lemon grass 

    2 pcs Bay leaf 

    5 pcs Lime leaves 

    Salt by taste

     

  • Chicken and all seasoning 2 mix together and boil in 1000 ml water for 45 minutes.
  • Fried the chicken or grill in the barbecue.
  • Direction

    FOR RICE: 

  • Mix all ingredients for rice and cook at rice cooker.
  •  

    FOR CHICKEN:

  • Clean and marinate with lime & salt, leave it for 15 minutes.
  • All above ingredients (seasoning 1) blend and mashed finely. 
  • Chicken and all seasoning 2 mix together and boil in 1000 ml water for 45 minutes.
  • Fried the chicken or grill in the barbecue.
  •  

    Serves

    Serve fresh on a plate with spicy sauce (optional) and some vegetable.

    Chef's Tip

    Before every order, we would boil large amounts of chicken in one pot and store it in the chiller after. Once there is an order, we would either fry it or grill it depending on the customer's and guest's preference.
