Cheesecake

Delicious cake made out of cheese will take care of your afternoon cravings.

Ingredients

This Recipe Serves 10

350g sugar

1 kg cream cheese, at room temperature

¼ teaspoon kosher salt

5 large eggs

480 ml heavy cream

30g all-purpose flour

Direction

  • Preheat the oven to 400 ° F (200 ° C). 
  • Grease a 10-inch (25 cm) detachable pan and cover it with parchment paper, leaving 2 to 3 inches (5 to 7.5 cm) sticking out of the top of the pan (You can cut a circle to fit the base and then cut a strip of paper to fit snugly around the sides, but the most rustic and simple method is to press an entire sheet into the tray, folding the paper where it starts to  wrinkle.)
  • In a large bowl with a hand mixer or in the bowl of a stand mixer fitted with the paddle attachment, beat the sugar and cream cheese until smooth.  (This can also be done by hand; beat with a wooden spoon for about 5 minutes.)  Add the salt and mix.  Add the eggs one at a time and stir until fully incorporated.  Whip the cream.  Using a strainer, add the flour to the mixture and fold in gently.
  •  Pour batter into prepared pan and bake for 50 minutes, or until golden brown and almost burned on top.  This can really vary from oven to oven, so it helps to keep an eye out for cheesecake after 50 minutes.  The center will still be quite shaken, but the cake is done.  Remove from the oven and cool.

  • Serves

    Before serving, remove the outside of the removable pan and gently pull the parchment paper.  Serve at room temperature.
