Banana Fritters

These banana fritters are a delicious way to use up your ripe bananas. fried to golden perfection, full of flavor and perfect for any meal.


This Recipe Serves 3

125 gr Plain flour - sifted

1 tsp Baking powder

75 gr Caster sugar

25 gr Desiccated coconut

1 Lime zest

Pinch salt

400 gr Ripe banana - mashed

Vegetable oil - for frying

Vanilla ice cream



160 ml cream

155 gr brown sugar

50 gr butter cubed

Place all the ingredients in sauce pan, stir for 5 minutes or until well combined


  • Sift the flour and baking powder in to a large bowl.
  • Stir in sugar, coconut, lime zest and salt.
  • Stir the mashed bananas in to the dry ingredient, mixing until well combined.
  • Cover the batter with cling film & chill for 15 minutes.
  • Pre heat deep fry to 180 degrees, drop 4-5 table spoons of butter in to the hot oil & fry for 2-3 minutes until golden brown on both sides.
  • Serves

    Lift out and drain on paper towel, sprinkled with icing sugar serve with ice crean & butter scoth sauce on a plate.

    Chef's Tip

    As topping you can also use caramel sauce or chocolate. Add some fruits if you feel like.
