Delicious grilled chicken with Lawar Kacang (salad with fresh grated coconut and long beans).

Ingredients

This Recipe Serves 1

250 gr Chicken leg

8 pcs Chili

8 pcs Red onion

2 pcs Garlic

½ tsp Nut meg powder

1 cm Ginger

1 cm Tumeric

½ cm Kaempferia galangal

1 cm Greater galangal

3 pcs Bay leaf

Shrimp pasta

1 tsp Sugar

1 tsp Salt

1 pcs Lemon grass

300 ml Water

300 ml Coconut milk

15 gr Grated coconut

25 gr Long bean

Direction

FOR THE CHICKEN:

  • Slice the red onion, garlic and chilli.
  • Chop the ginger, tumeric, galangal, bay leaf till smooth.
  • Mix all the ingredients with shrimp pasta, nut meg and salt.
  • Put the chicken with all ingredients in a pan, add 300 ml water and cook until the water will be reduced.
  • Add coconut milk and sugar and cook for about 10 minutes.
  • After cooking, cool it down and put in the fridge for at least 2 hours, but the best taste you will get if you leave it in the fridge for 1 day before cooking.
  • Heat the seasoned chicken in a pan for 5 minute and grill the chicken afterwards.
  • FOR THE SALAD:

  • Cut the long beans into small pieces and boil them for 3 - 5 minutes.
  • Mix them in a bowl with grated coconut together with the seasoning that was marinated with the chicken.
  • Serves

    Serve on the plate the chicken with rice together with the mixed salad. Add also a bit of the sauce on the chicken.

    Chef's Tip

    You will get the best taste of chicken if you leave it marinated in the fridge for 1 day before cooking.
