Zoodles Pesto & Tomatoes

The zoodles is a nice warm meal that doesn’t heat up your body. 
It’s perfect for sunny Bali and filling in a positive way as it is hydrating, energizing and satisfying. This meal is rich and balanced in nutrition. Its loaded with vitamins, fibre, protein and healthy fats but low in tiring carbohydrates. 
The zoodles are only sautéed for a few seconds in the pan, mixed with our homemade pesto and topped with lots of peas and cherry tomato. It’s the dish for everybody from vegan to paleo.

Ingredients

This Recipe Serves 1

FOR ZOODLES:
300 gr Zucchini
50 gr Cherry tomatoes
90gr Green Peas
5 gr Garlic
30 gr Onion

FOR PESTO:
10 gr Almonds slices
1 gr Basil
Fresh lime juice
Parsley
25 ml Olive oil
Pinch salt & pepper

Direction

FOR ZOODLES:

  • Use a Vegetable Spiralizer to transform the zucchini into spaghettis, add them in a hot pan with some coconut oil and sauté the zucchinis with onion and garlic and salt & pepper until they start looking transparent (approximate 5 min).
  • After sautéed the green peas, tomato cherry and basil, add it as topping on the noodles. Sprinkle some spoons of pesto on them and add a slice of lime.
  • FOR PESTO SAUCE:

  • Prepare basil leaves and mint leaves, almond slices, lemon juice, peeled garlic, olive oil, salt & pepper.
  • Mix it all together in a blender till smooth.
  • Serves

    Serve it in a bowl with pesto, slice of lime and some almonds on top.

    Chef's Tip

    Best to serve fresh.
