Tiramissu (with no whipping cream)

Tiramisù is made up of simple and poor ingredients, easily accessible to everyone and takes a short amount of time.

Ingredients

This Recipe Serves 8

150gr Super fine sugar

250 gr Mascapone

4 Eggs yolks and white separate

Strong coffe

200 gr Savoiardi(lady fingers) biscuits

Cocoa for dusting

Direction

  • The first step is whipping the egg yolks and the sugar with an electric beater until they are very thick and almost white color
  • Next, add the mascarpone and mix it together until fully incorporated and smooth.
  • Transfer mixture to a bowl, set aside
  • Clean bowl and whisk. Add egg whites and beat until it's stiff (3 minutes on speed 7), should be all white foam, add 1/2 the cream mixture into the egg whites. Gently fold through. When most incorporated, add the remaining cream mixture and fold through until just combined - don't bash out all the air in the egg whites!
  • Assemble the tiramisu by layering the creamy filling between ladyfingers that have been dipped into strong coffee
  • Serves

    Refrigerate at least 4 hours before enjoying to allow the ladyfingers to soak up all the flavours of coffee and creamy filling.

    Chef's Tip

    Have really fresh eggs and at room temperature before making this recipe.
