Perfect combination between Ox Tounge and Andaliman from North Sumatera (Batak).

Ingredients

This Recipe Serves 6

1kg Ox tounge

1pcs Lemon grass

50gr Ginger

5gr Cardamon

2 Leaves bayleaf

2 Leaves kaffir leaves

5 gr Chicken powder

10 gr Salt

5 gr Papper

20 gr Andaliman

150 gr Large green chillie

50 gr Green birds eye chillie

5 gr Sugar

Direction

FOR OX TOUNGE:

  • Simmer ox tounge with, lemongrass, ginger, cardamon, bayleaves, kaffir leaves, salt and papper for about 3 hours.
  • Remove ox tounge when its soft, remove all the skin and the fat from the tounge.
  • Slice the tounge in small pieces about 8 - 10 gr each.
  •  

    FOR ANDALIMAN SAUCE:

  • Wash all the chillie and andaliman, grind all together in mortar pestle, season to tase with salt, papper, sugar and abit of chicken powder.
  •  

    FINAL DIRECTIONS:

  • Make the Andaliman sauce in the pan, season it according to taste.
  • Put the beef tongue in the stirring sauce until it is covered in spices. Don't make it dry.
  • Arrange neatly on the plate.
  •  

    Serves

    Rice surrounded by ox tongue and vegetables such as tomatoes and cucumbers.

    Chef's Tip

    Make sure the Ox Tounge is Soft.
