Fat Mermaid Nasi Goreng

There are many versions of Nasi Goreng recipes, this one is one of the best seller at Fat Mermaid and it comes together with chicken satay.
Ingredients
1 and 1/2 tbs Vegetarian oil
2 cloves Garlic - crushed
1 and 1/2 cup Mixed cooked vegetable ( corn, carrot, cauliflower, green bean )
2 tbs Soy sauce
2 tbs Ketchup manis ( dark soy sauce )
4 Eggs, 2 eggs on the top of finished dish and 2 eggs as mix in the rice
1 and 1/2 cup Overnight cooked rice
100 gr Tofu - diced and fried
100 gr Tempe - diced and fried
Salt, pepper and chili flakes
Extra spring onion & chili for garnishes
FOR CHICKEN SATAY:
300 gr Chicken thigh filey - sliced
6 Bamboos skewers soaked (each skewer around 50 gr chicken )
FOR MARINATION OF CHICKEN SATAY:
1 cm Galangal - peeled, thinly sliced
4 stalks Lemon grass - slice
½ tbs Ground turmeric
2 cloves Garlic
5 small Red eschalots
2 tbs Brown sugar
½ tsp Salt
½ tsp Park soy
2 tbs Vegetable oil
1 tbs Ground coriander
1 tbs Ground cumin
Blend all the marinated ingredients to a fine paste. Put marinated chicken in the fridge at least 5 hours or overnight.

Serve in a big bowl. Fried sunny side eggs to put on top of the rice, also put the fried tempe and tofu for the chicken skewers. Serve pan fried or grilled the chicken in a separate bowl.
